My family LOVES strawberry shortcake! As a pastry chef, it is strange that this is the only cake that is requested of me from my children.
Every year, I bake this cake and since this week was my sons 18th birthday I thought it would be a great idea to share this recipe with you.
Strawberry Shortcake Recipe
Ingredients
2 cups all-purpose flour
6 tablespoons plus 1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup cold butter, cut up
2/3 cup milk
6 cups strawberries
1 cup heavy or whipping cream
1. Preheat oven to 425 degrees F. Grease 8-inch round cake pan.
2. In a medium bowl, stir together flour, 3 tablespoons sugar, baking powder, and salt. With pastry blender or 2 knives used scissor-fashion, cut in butter until mixture resembles coarse crumbs. Stir in milk and stir just until mixture forms a soft dough that leaves the side of the bowl.
3. On a lightly floured surface, knead dough about 10 times, just to mix. Pat dough evenly into prepared pan and sprinkle top with 1 tablespoon sugar. Bake 20 to 22 minutes, until the dough, is lightly golden.
4. Meanwhile, reserve 4 whole strawberries for garnish; hull and halve or quarter remaining strawberries. In a medium bowl, mix cut-up strawberries with 1/3 cup sugar until sugar has dissolved.
5. Invert shortcake onto a surface. With long serrated knife, carefully split hot shortcake horizontally. In a bowl, with mixer at medium speed, beat cream just until soft peaks form. Beat in remaining 2 tablespoons sugar.
6. Place bottom half of shortcake, cut side up, on cake plate; top with half of the strawberry mixture and half of the whipped cream. Place cake top, cut side down, on the strawberry mixture. Spoon remaining strawberry mixture on top and then spoon whipped cream on top of strawberries. Garnish with reserved whole strawberries. Makes 10 servings.
ENJOY! :)
Our BAKE AUSTIN Summer Camps have been a magical avalanche of learning, fun, food, and friendship! We are making! We are baking! We are shaking things up!
We ask our students to rate our Summer Camps.
What do our students give us? FIVE STARS!!!
A big THANK YOU from BAKE AUSTIN to all the wonderful students attending our Summer Camps.
And here is another review from our Pasta, Pizza, Party Camp.
"I enjoyed this camp so much! I would totally recommend this camp to someone who loves to cook! It was so epic! You get to make really inventive pastas. And on Friday you get to make pizza."
We love our students and we love what we do. Our students help create the magic that is BAKE AUSTIN.
And if you are still wanting your little chef to develop more skills, I suggest letting them practice their egg cracking skills. I see this over and over in my classes. There are kids that are afraid of cracking eggs, so let them have the opportunity every time. Like my mom used to say: "Practice makes perfect"
Have a wonderful weekend.
