At BAKE AUSTIN September comes right after our busy Summer schedule.
It is a welcomed time to get rejuvenated and revitalized. It is a time to catch our breath, reflect on our amazing Summer and look forward to our Fun Fall Class Schedule. October is almost upon us! At the beginning of September I helped my son move to L.A. to continue his pursuit of a successful acting career. We sent him off to a good start.
We are also very excited to announce the much needed expansion of BAKE AUSTIN's Kitchen!
We are very proud of our brand new Kitchen area (see picture). We purchased a new stove and decided to build a new kitchen around it. We are ecstatic with the results! The newness is energizing. We can't wait for you to see and experience our new improvements in person.
While in L.A. I made my son Green Chicken Enchiladas for dinner from a recipe that is a family favorite! Here is the recipe.
Ingredients
10 tortillas (flour or corn)
2 cooked chicken breasts or rotisserie chicken-shredded
1 large bag of grated cheese-your preference
1 can of mild green enchilada sauce
salt and pepper to taste
Black beans
garlic, onions, some oil
salt and pepper
cumin
Rice (my kids like brown rice)
Instructions
Shred Chicken Breasts
Place in bowl with shredded cheese
Add salt and pepper
Mix
In baking/casserole dish
Put small amount of sauce on bottom to keep from sticking
Fill tortillas with chicken/cheese mixture
Roll them and place them seam side down
Pour rest of sauce over top
Add more cheese on top
Bake at 350 degrees for approx. 20 min
until it bubbles
While enchilada are baking
Pour liquid out of the canned black beans to reduce sodium
In a pan cook onions in a small amount of oil until softened
add garlic
add beans and spices
1/2 teaspoon cumin
salt and pepper to taste
Put on low heat until warm
Cook Rice.
1 cup rice
2 cups water
Brown rice
1 cup rice
2 1/2 cups water
Place in pot
Cook for 20 minutes
Confession! I have a rice cooker. It makes life easier and removes the guess work.
Serve with pico and sour cream. Guacamole optional. Enjoy!

Oct. 3rd from 6-9:30 pm, we start the series with an evening of Baked Pretzels served with BEER in honor of Oktoberfest! If I'm brave enough I might be sporting my Dirndl. What a perfect date night! These are authentic Bavarian Pretzels. The big kind, the real thing!
This is a hands-on class where every participant will not only make their own pretzels but will also take the recipe and pretzels home. We will also have a sampling of German beer and as a little extra we will make the perfect cheese spread called Obatzer to go along with our fresh Baked Pretzels. Let's get Salty and Twisted! We are also pleased to present not one, but two different Authentic German Christmas Cookie classes. These are not ordinary holiday cookies. These are small delicious works of art!
You will leave this class with a tin overflowing with a varied assortment of delicious, holiday delights, plus a few expert baking tips and tricks. You will also receive our festive recipes to recreate these treasures at home! If you have taken this class before, never fear, we are pulling out new recipes as well as some of my Oma's favorites. Each class will offer a different assortment. This class is for the Big Kids, so please feel free to bring a bottle of your favorite wine.

After MANY requests we have included a Parent/Child class. We thought it was a very exciting idea. In this 2 hour class, participants will be paired in parent/child teams to decorate Halloween cupcakes, perfect for the littler, younger ones. Due to space limitations, the sign up is for ONE adult and ONE child per team. Buttercream will be provided for everyone to use. We will teach you how to make fun decorations using fondant and candy to give your cupcakes that extra spooky edge. No tricks! All treats! Each team will leave with enough yummy cupcakes to share. September also means a return to my monthly appearance on KXAN’s STUDIO 512 morning show. I gave a demo on Tuesday, Sept. 24th, on how to make our very popular Unicorn Cookies and to promote our Unicorn Cookie Magic class on Oct. 14th! I always look forward to seeing my STUDIO 512 friends.
