Halloween is just around the corner, and we're getting into the spirit of the season with a fun and delicious project – making Halloween sugar cookies decorated with royal icing!
I just taught an Halloween cookie decorating at Google in Munich, and I thought I would share some cookie-decorating ideas with you.
Whether you're planning a spooky soirée or simply want to enjoy some festive treats, these cookies are sure to delight.
🧛♀️ 🧙🏻Sugar Cookie Recipe
Ingredients:
2 1/4 cups (280 g) flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cups (170g) softened unsalted butter
1 package vanilla sugar
2/3 cup (150 g) granulated sugar
1 egg
Instructions:
In a large bowl, using a hand or stand mixer with a paddle attachment, beat butter and sugar on high speed until smooth and creamy (about 2 minutes). Add egg, and vanilla sugar and beat until combined (about 1 minute). Scrape down the bowl's sides as needed. Add flour, baking powder, and salt and mix on low until combined.
Place the dough on lightly floured parchment paper or a silicone baking mat. Roll out the dough to about 1/4-inch thickness, using more flour if needed to prevent sticking.
Preheat the oven to 170°C. Line 2-3 large baking sheets with parchment paper or silicone mats.
Cut the dough into shapes using a cookie cutter.
Bake for 11-12 minutes or until lightly browned at the edges.
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wirerack to cool completely before decorating.
Decorate the cooled cookies with royal icing and optionally tint them withgel food coloring.
Enjoy immediately or wait for the icing to set for gifting or storage. Thesecookies stay soft for about 5 days when tightly covered at room temperature or up to 10 days when refrigerated.
This recipe makes about 24 cookies
🦇👻 Royal Icing Recipe
Ingredients:
2 cups (240 g) powdered sugar
1 egg white
3-5 tsp lemon juice
Instructions:
Place egg whites in the bowl of an electric mixer and beat using the whisk attachment until frothy.
Add 1/4 cup of the sugar and mix well. Gradually add the remaining 3 3/4 cups sugar, beating on low speed and scraping down the sides.
Increase the speed to high and continue to beat the mixture until soft peaks form, about 5 minutes. At this stage, the icing will be very thick.
Add lemon juice or food coloring, a few drops at a time, to thin it to the consistency appropriate for the kind of decorating you are doing.
Scoop the Icing into piping bags and close.
TIP:
to get the outline consistency get to feel like thick yoghurt
