With the solar eclipse happening on Monday, I wanted to share a fun (and delicious!) dessert that's perfect for the occasion โ an Eclipse Cheesecake! It's easy to make and guaranteed to be a crowd-pleaser.
Now, what screams "eclipse" better than the iconic black and white of an Oreo cookie? This cheesecake basically is a giant Oreo! We've got a crumbly Oreo crust, a smooth and creamy filling, and a final layer of crushed Oreos on top for good measure. Seriously, YUM!
The Best Part? This recipe comes together in just 10 minutes, making it ideal for busy schedules. Chill it overnight for a perfectly set cheesecake, or if time is tight, you can enjoy it straight away. Just remember, sharing is caring! Don't disappear like the sun during the eclipse while you polish off the whole thing yourself.
Here's this super quick and easy recipe to get you started:
No-bake Eclipse Cheese Cake
Ingredients:
Crust:
1 package of Oreos
5 Tbsp melted butter
Filling:
1 1/2 cups heavy cream
3 packs (24oz) cream cheese room temp.
3/4 cup sugar
1/4 cup sour cream
3 tsp vanilla
1 pinch salt
2-3 tsp lemon juice

Instructions:
Prepare the Crust: Pulse the whole package of Oreo cookies in a food processor until finely crushed. Mix with melted butter until well combined. Set aside 1 1/4 cup of the mixture for the topping. Press the mixture firmly into the bottom of a 9-inch springform pan.
Make the Filling: In a large mixing bowl whip the heavy cream on high until stiff peaks form. Set aside. In a separate bowl beat together the softened cream cheese, sugar, sour cream, salt, lemon juice, and vanilla extract until smooth and creamy. Gently fold in the whipped cream.
Assemble the Cheesecake: Pour the filling over the Oreo crust and using a bench scraper or spatula smooth the surface. Top with the remaining Oreo filling.
Chill and Enjoy: Refrigerate the cheesecake for at least 4 hours, or ideally overnight, before serving. But if you are in a hurry you can eat it right away. Slice and enjoy the celestial flavor explosion!
